Weekend Wellness | No. 17

Hi, Friends! With cooler temps in Minnesota, we thought today would be the perfect day to break out a quick and easy soup recipe! This recipe you can easily alter to fit specific eating preferences and is fantastic reheated for work the next day. My whole family loves it!

Personally, I prefer heartier, thick soups and this one does the trick. The best part? You can throw it all together in the morning before work and let it simmer in the crockpot all day.

Ingredients:
1 pound organic boneless, skinless chicken breasts
1 cup salsa
2 cups organic chicken bone broth
1 can organic black beans (drained and rinsed)
1 can organic pinto beans (drained and rinsed)
1 can organic diced tomatoes (my husband is not a tomato fan, so I like the petite diced tomatoes)
1 can organic corn (drained)
4 tablespoons taco seasoning
Optional: Garnish with avocado, sour cream, green onions, cheese, cilantro, or even tortilla chips.

Directions:
1. In your crockpot, combine all of your ingredients together, making sure the chicken is completely covered.
2. Cover and cook on low for 6 hours (we let it cook on low for our full workday and it tastes great every time).
3. Remove chicken and shred, then stir back into the soup.
4. Serve as desired.
