Weekend Wellness | No. 8

Happy weekend friends! We are a bit late on our Weekend Wellness post, but we couldn’t resist sharing this easy summer recipe with you! With these extremely hot temps that snuck up on us this past week (thank you MN weather for that fun week and keeping us on our toes-because our kids don’t do that enough I guess) we have been craving all the cold salads around here! Also, they are really nice to pack in the kids’ lunches because come May we are over that too, bring on SUMMER! This recipe lasts a few days in the fridge, is healthy, and so delicious. This recipe is also up for any interpretation. If you don’t like an ingredient or you just want to get rid of the vegetables you’ve got in the fridge, just swap it out! So here we go…

Quinoa Salad

Step 1- Cook the quinoa and brown rice on the stove top. (Lentils are fun to throw in too and they are a legume, so they are high in protein) Chop up your vegetables while that is cooking.

Step 2- Prepare the dressing ingredients and then toss all the veggies in.

Step 3- Run your quinoa and brown rice under cold water through a MESH strainer (you can mix it in warm but it’s much better cold and I don’t have patience for it to chill in the fridge) and with the back of a large spoon push all of the water out.

Step 4- Mix the quinoa and brown rice with the rest of your ingredients and serve immediately and toss it in the fridge to eat throughout the week.

2 cooked cup of brown rice (If doing lentils do 1 cup of brown rice and 1 cup of lentils)

2 cooked cups of quinoa

1 red bell pepper diced

1 yellow bell pepper diced

1 cucumber diced

1 large tomato diced

1 cup of chopped baby Kale

¼ cup olive oil

3 TBSP of apple cider vinegar

1 lemon, juiced

1 teaspoon sea salt

½ tsp black pepper

1 green onion

Cilantro and avocado on top if that’s your thing (it’s worth the extra work-I promise)

Feel free to add in different spices as you see fit. Some days I like a little Cayenne to add heat and other days a little garlic and onion powder is good too. So easy, healthy, and convenient!
